Kitchen and Craft: Cranberry Orange Muffins

   These are the most beautiful muffins I have ever tasted. Before discovering these, I did not like cranberries at all. My family would have cranberry torte and things like that, and I would not eat it because I hated cranberries. I have always thought oranges were okay, so nothing really changed for that. But I am a whole new person when it comes to cranberries, thanks to this recipe.

 

   But my, oh my, these muffins are delicious. I am pretty sure that I cried the first time whilst eating these, they are so beautiful and tasty. The way the orange and cranberry just works together so well, it is like the fruit has a party on my taste buds.

 

   The muffins are actually pretty simple to make and have basic ingredients, so they are perfect for first-time bakers and for experienced bakers who want a bit of an easy recipe.

 

1 1/2 cup Cranberries, fresh or frozen

1 Orange, zest

1 Egg, large

1 1/4 cups All purpose flour

1 1/2 tsp Baking powder

1/4 cup Brown sugar

1 tsp Salt

1/4 cup White sugar

1/4 cup Vegetable oil

1/2 cup Milk

 

   Step one is to combine the flour, sugar, salt, baking powder and brown sugar in a medium to large bowl. Whisk together the ingredients until combined.

 

   Next, add the milk, egg, vegetable oil and orange zest into the flour mixture. Stir until well combined and a thick, batter-like texture is formed.

 

   Add in the cranberries and gently fold over the batter, being careful not to squish the cranberries. No one wants crushed cranberries in their muffins.

 

   Then, scoop the batter into the muffin cups and bake at 375 degrees for around 20 minutes or until cooked through fully.

 

   To be extra while making the muffins, instead of just combining the wet and dry ingredients on the spot, add the flour, salt and baking soda to a large bowl and combine the sugars, milk, oil and egg to a different bowl. Slowly add the wet to the dry, folding over gently when every third of the wet has been added in. Then just add the orange zest and cranberries.

 

   Finally, enjoy the muffins! They are perfect for breakfast or even a snack.
