Comfort in the form of pasta: mac and cheese. Mac and cheese dates back to an ancient Italian cookbook from the 13th century, and has been a popular comfort dish among kids, teens, and adults since. There are many different types of mac and cheeses, but nothing beats it being homemade.
Depending on the number of people eating, ingredient amounts may vary. This recipe feeds two to three people, but the more people, the higher the increase in ingredients.
Ingredients:
Any kind of pasta
2 cups shredded cheese, any kind
¼ cup heavy cream
2 tbsp butter
1 tbsp minced garlic
1 tbsp red chili pepper flakes
1 tbsp paprika
1 tbsp garlic powder
1 tbsp dried parsley
Salt and pepper, to taste
- In a saucepan, melt the butter and combine with the minced garlic, heavy cream, and shredded cheese. Bring this to a simmer, or until the melted cheese mixture is lightly bubbling. Ensure the saucepan is large enough to hold all of the cooked pasta.
- Simultaneously, fill up a pot with water, add salt, and bring it to a boil. Once boiling, add the pasta. Adding some olive oil to the boiling water will help the pasta to not stick to each other, but this is not required.
- Boil until the pasta is al dente, roughly six to ten minutes depending on the shape and size of pasta used.
- Once the pasta is ready, slowly add it into the cheese mixture. Stir until fully combined.
- Next, add the red chili pepper flakes, dried parsley, paprika, and garlic powder to the mac and cheese. For more flavor, add more of these or exchange for stronger seasonings.
- Stir the mac and cheese until well combined, and serve.
