   Every season is the right season for cheesecake. It is the perfect in-between dessert for the holidays or changes in weather. 

   Some may find the act of making and baking cheesecake as tedious. Well what if it could be made in less than 30 minutes.

These easy to make cheesecake bites only need a handful of ingredients: 

  • Pack of cookie dough
  • 2- 8oz. Packages of Philadelphia cream cheese 
  • 14oz. Can of sweetened condensed cream
  • ¼ Cup of lemon juice (Not for flavoring but to mellow the tang in the cream cheese)
  • 1 Teaspoon of vanilla extract

   To start the process, bake the cookies as directed on the box (these will be used instead of traditional graham cracker crust).

   While the cookies are baking, go ahead and beat the cream cheese on medium to high speed in a mixing bowl. 

   When cream cheese is fluffy, slowly add in the cream and mix on a low to medium speed.

   Once cream is fully mixed, add the lemon juice to the mixture and mix on a low to medium speed. 

   Finally, add the vanilla and mix until fully mixed. 

   After it is fully mixed either leave it in the bowl covered in the refrigerator, or for easier application later, fill piping bags (or Ziploc bags) with the filling and allow them to chill in the refrigerator.

   When the cookies are finished baking, allow them to sit and cool, then move them to the refrigerator (this will help the cheesecake filling from becoming runny later on).

   Once about 30 minutes have passed, lay cookies face down,fill one side with cheesecake filling, and top it with the other cookie. 

   Some things to note:

  • All kinds of different cookies will work.
  • To create other cheesecake flavors just add your desired toppings or fruits into the filling.
